The conference will deal with various aspects related to the milling of grains of local cultivars of cereals (and pseudo-cereals) that are traditionally cultivated in the mountains of Lombardy. In particular, the various methods for milling grains will be presented and compared, and indications will be provided on the best practices to follow in order to obtain a quality product (flour). During the conference there will be a practical demonstration of milling, and the various types of flour obtainable by milling the grains of local cultivars will be presented and described. The conference is aimed primarily at farmers potentially interested in the cultivation of traditional and local Lombard cultivars, as well as all those who intend to create new small production chains based on such cultivars.
